Taste of Home: DIY Family meal – succulent homeburger

Both my husband and I grew up with family dinners every night. So, we try to make it happen in our own family because we reckon it is the best way to connect and find out what’s going on with each other, and it creates memorable family meals.

On top of that, every week, we always have a night assigned for easy fun family meal – either we do a DIY family dinner or we order food for delivery. Thus, for tonight, we decided to make succulent homemade burgers with homemade buns and homemade patties and packed with fresh organic lettuce, tomatoes, and onions and herbs for extra flavor and Emmental cheese.

I made the buns and my husband cooked the patties. In his burger recipe, he used minced pork and minced chicken to maintain the softness. He thinks that beef alone makes it too tough, chicken alone too dry and pork alone too fat.

We love juicy burger, but each of us has different opinions about what should be included. Plus, customizing our own burger makes everyone happy. It was certainly fun and we love the interactive dinner vibe. Overall, all of us enjoyed our delicious restaurant-style burgers.


What you need for buns:

  • 3 tbsp salted butter, melted
  • ½ cup milk
  • 2 tbsp brown sugar
  • 2 eggs (1 for the dough + 1 for the egg wash)
  • 1 pack instant yeast
  • 2 cups all-purpose flour
  • 2 tbsp sesame seeds

What you need for patties:

  • 500 grams minced chicken
  • 500 grams minced pork
  • 3 big onions, sliced
  • 4 tbsp Kikkoman soy sauce
  • 2 tsp of flour
  • red pepper, freshly crashed and to taste
  • cooking sunflower oil

What you need for homeburgers:

  • 1 big tomato, sliced
  • lettuce
  • Emmental cheese
  • ketchup
  • mayonnaise
  • Tartare sauce
  • Rouille sauce
  • Aioli sauce
  • Mustard

How to make buns:

  • In a mixing bowl, put in the butter, milk, sugar, egg, yeast and flour.
  • Mix well. Let it rest for 1 hour until the dough has risen well or double in size.
  • Knead the dough until it becomes softer and no more leftover.
  • Form it into small balls. Let it rest for 45 minutes until they double in size.
  • Prepare the egg wash in a separate small bowl. Whisk up 1 egg and 1 tsp of water.
  • Brush the surface of the bread.
  • Spread sesame seeds
  • Bake it in a preheated oven at 160⁰C for about 17 minutes.
  • Take it out from the oven and let it cool down for about 2 hours.

How to make patties:

  • Put the minced pork and minced chicken in a mixing bowl. Add soy sauce and flour. Mix well. Set aside.
  • Sautee the onions until it becomes caramelized.
  • Put in the onions into the meat mixture.
  • Form small balls. Flatten it.
  • Fry the patties in a high fire.
  • Put them on a paper towel to remove some oil and to let it cool down.

Putting together:

  • Assemble your burger your way until it reaches perfection.

Taste of Home: Stuffed chicken breasts

Tuesday morning was scorching hot and I wasn’t really feel inspired to cook and I hadn’t planned anything for lunch. Plus, when I asked my boys what they want for lunch, they said “I don’t know”.

So, I checked what we had in the fridge. I found chicken breasts and some vegetables. Then, I came up with this idea randomly: stuffed chicken breasts.

It turned out to be insanely good packed with colorful flavor. I served it with mashed potato prepared by hubby (leftover from Monday lunch) and stir-fry broccoli.

It’s super easy and you can stuff the chicken breasts with whatever vegetables you want.

What you will need:

  • 4 chicken breasts, boneless and skinless
  • 1 large tomato, sliced
  • yellow bell pepper, sliced
  • 1 large shallots, sliced
  • 2 tsp chicken powder
  • 2 tsp paprika
  • 1 tsp oregano,
  • freshly crashed red Kampot pepper to taste
  • some shredded cheddar cheese
  • 2 tbsp olive oil
  • some fresh parsley, chopped

How to make it:

  1. Make slits in each chicken. Make sure you do not cut through completely.
  2. Seasoned with chicken powder, paprika and freshly crashed red Kampot pepper.
  3. Stuff with shallots, tomatoes and yellow bell pepper and sprinkle oregano.
  4. Drizzle with olive oil.
  5. Sprinkle cheddar cheese.
  6. Put the chicken in a preheated oven to 220⁰C and bake it for 25 minutes.
  7. Garnish with freshly chopped parsley.
  8. Et voila – lunch is ready! Serve, share and enjoy with your loved ones!


Taste of Home: Scotch Eggs

I have learned that in the Middle Ages, British farmers and herdsmen made these Scotch eggs as their portable means of having some food in the fields; paired it with bread and something to drink. Nowadays, this special little treat is a favorite pub meal in Britain and in some other places around the world.

Since my son really loves hard-boiled egg, I made Scotch Eggs for breakfast last Thursday morning and they were absolutely tasty. I have also tried cooking it with minced chicken instead of sausage meat, and it was still delicious. While cooking it, I have realized that even though it looks very complicated, it is actually incredibly easy to make.

For those who are hard-boiled egg and sausage meat lover, here’s the recipe for you.

Ingredient for 5 Scotch eggs:

  • 250 grams sausage meat
  • 5 hard-boiled eggs, peeled
  • 1 egg, beaten
  • 1 tablespoon fresh parsley, chopped
  • 2 spring onions
  • ¼ teaspoon black pepper
  • salt, according to taste
  • 1 tablespoon all-purpose flour
  • bread crumbs
  • 3 tablespoons cheese, grated
  • cooking oil


  1. Put the sausage meat into a mixing bowl. Add flour, salt, pepper, parsley, spring onion and cheese. Mix the meat mixture properly.
  2. Put the beaten egg in a dish and put the bread crumbs in a spate dish.
  3. Hold a hard-boiled egg, cover the egg with some meat mixture around it then roll between your hands to shape.
  4. Dip the balls (hard-boiled egg coated with meat mixture) into the egg. Roll it in in the bread crumbs until coated. Then shake it off to remove the excess.
  5. Put the cooking oil in a large frying pan. Heat it up. Put the balls carefully into the hot oil. Fry it for 5 minutes or until turn deep golden brown.
  6. Serve and enjoy!







Taste of Home: Normandy Chicken

We both like cooking. There is no day in a week when we don’t cook no matter how busy we are. We just love our food!

On Thursday morning while I was busy about work my man cooked Normandy Chicken for our lunch before he left for work in the morning. It is a French dish. I would say, this Normandy Chicken is just irresistible and hearty!

Ok, so this is what Alan told me about his way of cooking:

He either tastes, hears of, or reads the recipe of a dish and gets the names and proportions of the basic ingredients. Then he tries to balance the ingredients in his mind and to add/subtract ingredients that may or may not fit. Then he cooks. With experience on his side, the result is most times above most those of the restaurants experiences he has enjoyed/suffered so far. Back when he lacked experience of course, the results were disastrous as often as not, cook-wise.

As far as he is concerned, here is the root of the recipe and Alan’s personal take on it. Normandy is a region of France famous for its orchards and strong apple liquor named Calva. The recipe is basically a mixture of button mushrooms, apples, lemon juice, fresh cream, mustard, salt, pepper and Calva. The idea is that the strong and earthy taste of mushrooms will be balanced by the sugar of the apples, the bitterness of the lemons, the spicy flavor of black pepper, the acidity of the mustard and the sweetness of the fresh cream. He buys and cooks the ingredients when they are fresh, he has a strong dislike for tin and ready to go food, it just tastes too weird to him.

The original recipe he read called for veal, but local chicken is his favorite for the meat. The cream is fat enough for the dish, as far as he is concerned, so he goes for chicken as opposed to veal or pork. He also goes for Cognac instead of Calva, as for his taste the Calva’s flavor is too strong and spoils the pleasure you get from the other ingredients. Cognac still adds the tang this dish needs but without taking over. When he marinates the chicken, he also adds a bit of ginger to it, it goes down well with lemon and pepper, he says.

Please keep in mind that, as he puts it “I cook for my own pleasure and that of my friends and family, so feel free to disagree, make changes, improve or, why not, approve.”

Ingredients for 4 servings:

  • 2 lemons
  • 3 apples
  • 300g of mushrooms
  • 400g of chicken breast
  • black pepper
  • salt
  • mustard
  • 15 cL of cooking fresh cream
  • Ginger
  • Cognac


  1. Cut the mushrooms into thin slices and cook them very gently.
  2. Do the same with the sliced apples. They should be cooked but not too much.
  3. Put those two in a separate dish to cool off when they are ready.
  4. Get the juice from the lemons and add it to the mushrooms/apples mixture, then add the fresh cream.
  5. In a separate dish, put the sliced chicken, mustard, black pepper, squeezed ginger juice and salt together. Leave it alone for about one hour.
  6. Stir-fry the meat marinade, add a bit of water if need be, and then mix it with the other ingredients in the saucepan.
  7. When the mixture is ready, heat up about 15cl of cognac quickly in a small saucepan, pour it over the dish and then flambé the mixture (He does not know of any equivalent term in English, it means setting the mixture on fire for a very short period of time so that the alcohol evaporates and only the tang of it remains, be very careful when you do so, and never do that anywhere near a fan/AC, etc).
  8. We like to eat this dish with rice. Et voila, as English people say.
